In collaboration with illy caffe I made the perfect sweet treat that would satisfy any coffeeholic. This illy inspired almond and macadamia nut brittle infused with fragrant orange will be your new favorite dessert ever – whether during the summer or colder seasons. The nut brittle is a combination of complex flavors and textures which adds incredible depth to the ice cream based dish.
Espresso Nut Brittle Affogato
ingredients
- one cup of granulated sugar
- quarter of a cup of honey
- quarter of a cup of maple syrup
- quarter of a cup of illy espresso
- one cup of almonds, roasted and chopped
- half a cup of macadamian nuts, chopped
- one to two tablespoons of unsalted butter
- one teaspoon of sea salt
- three-quarters of a teaspoon of baking soda
- flakey sea salt for topping
- orange zest for topping
instructions
Line a baking sheet with parchment paper.
In a small saucepan place the granulated sugar, honey, maple syrup and espresso. Measure the remaining ingredients into a separate mixing bowl and keep it placed next to the stove, along with a heat-proof spatula.
Heat the saucepan over medium heat, stirring occasionally to help the sugar dissolve. Fit a candy thermometer to the side of the saucepan and cook until the caramel reaches 150 degrees celsius. Remove the saucepan from the heat and quickly stir in the nuts, unsalted butter, sea salt, and baking soda.
Pour the caramel onto the parchment paper and spread evenly with a spatula. Finally, sprinkle with the flakey sea salt and orange zest. Set it aside to cool completely before breaking it into bite-sized pieces.
Serve with vanilla ice cream and a cooled shot of illy espresso!
