Cheese Burek or Burek sa sirom is a Balkan savory pie made with flaky filo dough and, in this case, a white, mature cheese. Some people consider them the quintessential hangover or breakfast food, especially with a cold glass of kefir or yogurt.

- five hundred grams of filo pastry
- five hundred grams of white, mature cheese
- five eggs
- two hundred milliliters of mineral sparkling water
- two hundred milliliters of vegetable oil
- two teaspoons of baking powder
Crumble the cheese into a mixing bowl, add the eggs, mineral water, oil and baking powder. Stir well.
Grease a baking sheet with oil. Place one sheet of filo pastry in the middle of the baking sheet, leaving one edge outside of it; repeat this four times, until all four sides of the baking tray are covered with filo sheets.
Grease each sheet separately with oil. That way you will form the base crust of this pie, and with the edges you will form the top crust later on.
Crease the next sheet of pastry in your hand, dip into the mixture you have prepared, and place it in one side of the baking tray. Repeat the procedure, placing the creased sheets next to each other until all the pastry or mixture is used.
Now overlap the burek with the edges of four sheets you have put at the bottom of the tray - do it with the first, grease with oil, then the second one, and so on.
Brush the top sheet with oil and bake in the oven for about thirty minutes at 250C or 482F. The top crust should be deep gold in colour. Let it cool for a while after baking and then cut into desired pieces.
